No goodnight kiss, I came home to a sleeping boy. He's so funny, he's got that piece of fabric wrapped around his arm, he's even worn it like that to school for 2 weeks. Kids!

Today I'm showcasing a product which I LOVE! The Flip & Tumble reusable bags. It's not the smallest reusable bags that I own, but they are cute and fun. The shoulder strap is useful in a different way then the bags that are t-shirt shaped.

I really do have nerdy kids! And yes, I had a great day food-wise and go screw it up with some Chinese food. ARgh! Well, I'm going to the gym tomorrow, but I'll also have to make it up by not cheating on my meals. Cereal with soy and banana for breakfast, yogourt for snack, spinach salad and I have no clue for supper.

30 days of love - Countdown to Valentine

Here are some sweet suggestions to make with or without kids :

- Heart shaped Rice Krispies treats made with strawberry marshmallow or use freeze dried red berries
- Make homemade strawberry marshmallow and cut into hearts using a heart shaped cookie cutter (the recipe from Brownie Points has been tried and tested and works wonderfully!)
- How about some cake truffles like Bakerella makes. The red velvet cake is perfect! But once again, any pink cake would do. I personally prefer a cherry cake.
- Let's not forget heart-shaped cookies, but filling them with a nice raspberry jam is even better!

We went to the zoo today. It was such a warm day for mid-january. Here's a pic of the animal I most wanted to see "tigre d'amour". Sadly, they were all taking a nap. Don't you just love the little pink tongue sticking out, just like a house cat!

Reading in bed. For some reason, the kids just love this comic strip. It's french, the series is "Les Légendaires". They borrow the books from the library over and over again. So they stared getting them for gifts before and at Christmas. Now they are buying them with their own money. The 12th issue is coming out soon. At least, it's a good investment when a book is read more then once! (they've read them at least 5 times each!)

Countdown to Valentine's day... one month away

Please don't shoot me! I'm not a big lovey dovey Valentine believer. To me, Valentine's is just an extra day to tell those around you that you love them and miss them when they are away. But since I need something to blog about, I thought I'd do a Valentine's day countdown with products, recipes and crafts related to hearts, pink and red that I like. So let's start with the amazing 2-quart Le Creuset pot found at cooking.com for US$149.95. It is also offered in Canada at Golda's Kitchen for C$210.

Day 2 at the gym..

The place was unpleasantly crowded. I got there, couldn't start on the treadmill so I went to a stationary bike, followed by the rower since the treadmills were all still taken.

One of my goals this year is to clean up my stash of recipes...

To achieve my goal, I will use my blog to archive some of my favorite recipes. I will post them as I cook them so that I can try to take a picture of the result. In the end, I will have less paper in my recipe binder. I might print them out on cards to add to my recipe box, but no more binder.

The first three recipes I posted (red soup, green soup and mushroom/chicken pasta) are recipes that I make regularly and end up looking for the recipe each time. Now I'll just have to pop the laptop on the counter to get ready to cook!

Creamy Chicken and Mushroom Fettuccine (adapted from ilovepasta.org)

12 oz fettuccine, uncooked
8 oz boneless, skinless chicken cut into 1/2-inch cubes (I use chicken breast)
8 oz mushrooms, sliced
1/2 cup dices red bell pepper
1 1/2 cup low-fat mayonnaise
3/4 cup skim milk
1/4 cup Parmesan cheese
1/2 tespoon paprika
Salt and pepper to taste

Cook the pasta al-dente.
Coat a large pan with cooking spray. Add the chicken and sauté over medium-high heat, stirring frequently, until the chicken is golden brown and cooked through, about 4 minutes. Remove the chicken from the pan. Recoat the skillet with cooking spray. Add the mushrooms and the red peppers and sauté until tender (about 5 minutes).

In a 500 mL jar, combine the mayonnaise, milk, cheese, paprika and S&P. Pour over the vegetables, add the chicken and heat over medium-low heat until thoroughly heated.

When the pasta is done, drain and return to the pasta pot. Add the pan conteent and mix well. Serve immediately.

Approximate nutritional value:
Calories: 563
Protein: 26g
Carbohydrates: 90g
Fat: 10g

Green Soup (from a Montreal Gazette clipping)

Green Soup (serves 8)

1 tablespooon butter
1 1/2 cups sliced leeks (white part only)
1 small onion, sliced
6 cups chicken stock
1 small coarsely chopped potato
Salt and pepper to taste
1 bunch fresh spinach, rough stems removed
2 bunches watercress, rough stems removed
1/2 cup milk (optional) - or add a dollop of sour cream to each bowl

In a large pot, melt the butter, add the leeks and onions, sauté for 5 minutes on medium heat.
Stir in the stock, potato, salt and pepper. Bring to a boil.
Reduce the heat and simmer, uncovered, until the potato is done (about 20 minutes).
Ten minutes before the end of cooking, add the spinach and 1 1/2 bunch of the watercress. Cool slightly, pulse carefully in a food processor, adding the remaining watercress. Return the soup to the pot, add the milk and heat gently.

Approximate nutritional value:
Calories: 50
Protein: 2g
Fat: 2g
Carbohydrates: 8g
Fiber: 2g

Mild Red Pepper and Tomato Soup (from a Montreal Gazette clipping, date unknown)

Mild Red Pepper and Tomato Soup (serves 6)

1 cup chopped onion
2 cups chopped sweet red peppers
2 tablespoons olive oil
1 can (19 once/540 ml) of tomatoes, drained and chopped
1 1/2 cups water
1 teaspoon grated lemon peel
1 teaspoon salt
Freshly ground pepper to taste
Sour cream
Parsley

In a 3L pot, heat olive oil and sauté onions and red peppers over medium heat until tender. Add tomatoes and simmer, uncovered for 10 minutes. Place in a blender with water and spin quickly until blended but not completely smooth. Add lemon peel, salt and pepper. Return to pot, cover partially and bring to a simmer. Serve topped with sour cream and chopped parsley.

Approximately (excluding sour cream):
125 calories per serving
Fat: 9g
Protein: 2g
Carbohydrates: 12g
Dietary fiber: 3g

Very blurry picture, not the best of the day, but it captures a great scene. The kids are now in the same class at circus school and while they were both supposed to be practicing their jumps, they stopped for a chat.

I hit the gym!!! I spent 55 mins on various cardio machines. Feels good!

Now for today's picture... We missed Epiphany yesterday because I had a class at 6pm and the bakery was closing at 5pm. So we made up tonight. So here is this year's king.

Last day of nothing to do...

I better start catching up on things. This is the last day with no activities, tomorrow it's back to work for me and the kids start school on Tuesday.

I have to finish the laundry, folded and put away. Complete the calendar for January so that we know who goes where on which day. I have to prepare my school supplies since university starts this week, still unsure about my course load. Plan the meals for the week, quick run to the grocery store.

Most importantly, we have books due at the library, so we need to do a quick run their and select some books.

I'll start by putting a load in the machine and grab a quick wake-me-up shower.
